A frugal feast

Dinner tonight was a random affair as I attempted to use up a load of odds and ends in the fridge to stop them going off. And it was a veritable frugal feast. 

We started with some pork belly that had been reduced in Tesco to 40p for 6 pieces. These I sprinkled liberally with swartz spices for pork than I got for free on checkout smart. Next some yellow stickered potatoes mixed with 1/3 of a 6p celeriac. I mashed these up with some chopped up sundried tomatoes and some of the oil from the jar. 

Celeriac, if you don’t know it, is a lumpy, bumpy vegetable related to celery. It has a mild celery flavour that I’m not the biggest fan of, but it does cook out, meaning I’m happier with it.

Next, I had some  5p spinach (which was really dull) which I jazzed up with the last of the jar of pesto. I added some jersey potatoes from the night before (reduced to 5p for the bag) and some cooked red cabbage I’d got free, spiced up with some dried thyme that I’d dehydrated a few days ago.

All in all, tonights dinner for 4 would have come in at about 80p for two adults and two kids.
